Namaste Trini

Hey Everyone, this past two weeks I’ve been working on some changes in my food blog and on social media. This image turned out to be exactly what I wanted to have and I’m glad it worked out. Also, I’ve been spending some time in the garden planting beautiful flowers and vegetables. Definitely planting some hot peppers, because I do like a little kick in the indian food…lol. Mother’s Day Dessert

Today I will be sharing a special Mother’s Day dessert that I made for my mom. She’s always given me the support in anything I set my mind to do. It’s because of her I am who I am today. On my blog, I dedicate this Mother’s Day post to my mom. Originally I was planning to keep this dessert a surprise for her, but I got caught in the kitchen…lol. Her favorite dessert is a refreshing strawberry cake. This strawberry cake is super moist and in the middle, I added a layer of strawberry sauce. Topped with using her Homemade Cream Cheese frosting recipe. To make this cake I used a regular Strawberry cake mix and followed the box directions. In addition, I also have the instructions to make a Strawberry Sauce and Homemade Cream Cheese frosting. I would like to wish all the mom’s out there a HAPPY MOTHER’S DAY!

Ingredients

1 Box of Strawberry cake mix (any cake brand like Pillsbury or Betty Crocker) follow box directions instead of One cup Water use One cup milk, 1/2 cup oil, and 3 eggs

Strawberry Sauce (Middle layer) Optional

1 lb Strawberries

1/4 cup White Sugar

1/4 cup Water

1/2 Lemon (juiced) No seeds

Method: Cut up strawberries into small chunks (that way the sauce will cook faster). Combine all ingredients in a small pot, medium heat. Bring to a boil, cook over medium low heat for about 20-30 mins. Look for a syrup texture and strawberry chunks are still visible. When sauce is completed move away from heat and allow to cool for 1 hour.

Cream Cheese Frosting

1 Large Cream Cheese (Room Temperature)

1 Stick Margarine (unsalted) (Room Temperature)

1 Box (2 cups) Powdered Sugar

1 tsp Vanilla Extract

Method: Mix well and spread over cooled cake. Cover top, sides, and center. (Optional)

Mother’s Day Strawberry Cake!

Chocolate Chip Pudding Cookies

Last week, I was having a craving of homemade chocolate chip cookies. So I decided to go online searching for a really nice chocolate chip cookie recipe. I came across Chocolate Chip Pudding Cookies. This cookie recipe came from I Heart Naptime http://iheartnaptime.net. My immediate thought was “Pudding in a Chocolate Chip Cookie”. As I kept reading about this cookie recipe it’s the instant vanilla pudding mix you’re adding in the cookie. That gives the cookie a really soft and chewy taste. Being that I had all of the ingredients I baked these cookies the next day. After following the method of making these cookies it was time to give a try. My goodness! I was really amazed by how these cookies turned out. The edges of the cookie were buttery with a nice crisp. Soft and chewy just like how a cookie should taste. Also, with all the chocolate sweetness it pretty much sums up the PERFECT COOKIE! I do recommend trying out this cookie recipe. Enjoy!

Ingredients

1 cup Butter (salted and softened)

3/4 cup Brown sugar

1/4 cup White sugar

1 1/2 tsp Vanilla Extract

2 Eggs

2 1/3 cup All-purpose flour

1 (3.4 oz) package Instant Vanilla Pudding mix

1 tsp Baking Powder

1 tsp Baking Soda

1/4 tsp Salt

3/4 cup Semi-sweet chocolate chips or (milk chocolate chips)

3/4 cup White Chocolate chips

Directions

  1. In a mixing bowl add butter and sugars (brown and white) together. Use a cake mixer to mix 1 or 2 minutes for a creamy texture.
  2. Include the vanilla extract and the eggs one by one. Mix all together
  3. Then in a different mixing bowl, add the All-purpose flour, baking powder, baking soda, salt, and Last but not Least the Instant Vanilla pudding mix (actual mix itself). Combine all these ingredients together.
  4. Gradually add the dry ingredients into the wet ingredients. Add chocolate chips to the mixture and mix completely until a cookie dough is formed. 
  5. You can use your hand to create dough balls or scoop them out. Rest on a baking tray.
  6. Set oven at 350 degrees Note: On “I Heart Naptime” the directions suggested 8-10 minutes for baking. For me, I baked my cookies for 6-8 minutes.
  7. After cookies are done baking allow them cool for a few minutes.

Serving Size: 20-24 cookies (My total was 21 cookies)

Makes: 6-8 minutes or 8-10 minutes

Jamaican Dinner

How many of you plan to make a trip to Jamaica? The beautiful beaches, exploring the culture, and trying out their tasty cuisine. I do have that on my bucket list as one of the places for me to visit. Being that the weather was sunny and breezy it was the perfect day for a Jamaican meal. As you can tell I was feeling “Irie” today…lol. My dinner today was incredibly delicious and an island staple in Jamaica. Here’s what I had on the menu Jerk Chicken, Rice with Kidney Beans, Coleslaw, and Jamaican fried dumplings. You guys I have to let you know this dinner was very tasty. I do plan on making this recipe again. Next time, I’m making this dinner I’ll add plantains for the real Caribbean vibe.

Roasted Broccoli and Cauliflower

I’m pretty sure when the year started everyone has a New Years Resolution goal of eating healthy. Going out to the gym or as of now working out at home. Eating healthy is a vital part of staying fit and at the same time, you enjoy your food. I have a Roasted Broccoli and Cauliflower recipe that can go well with any meal. This recipe is very simple to follow and extra tasty. I know you’re going to love it! 

Ingredients

 Head of Broccoli

 Head of Cauliflower

 Olive Oil (drizzle)

1 tsp of  Italian Seasoning

1 tsp of Steak Seasoning 

 Salt and Black Pepper (to taste) a pinch

Directions 

  1. Wash and cut vegetables into florets (remove the stem).
  2. Place them on a long baking tray with a drizzle of olive oil.
  3. Add the Italian and Steak seasoning to help give the flavor of the vegetables. After that add salt and pepper for taste.
  4. Mix everything together let the vegetables incorporate with the olive oil and seasoning.
  5. Preheat oven at 350 degrees and if you have a button that says Roasted you can use that button. If not, then the Bake button should work as well.
  6. During this time while the vegetables are in the oven you are looking for them to turn light brown. MAKE SURE TO KEEP AN EYE!
  7. After they are done take them out of the oven and allow them to cool for a few minutes. You can add grated Parmesan cheese on top (optional).

Makes: 10 minutes

Easter Weekend Dinner

This past weekend I spent some time with my family and we watched movies. It was very comforting being with them and catching up. For Easter, the dinner I’m about to post includes a creamy potato salad, Caribbean fried rice, and homemade fried chicken. I enjoyed every bit of this meal. Usually for an Easter meal I would cook a baked salmon with an herb and butter rice, but I wanted to something different. I hope you all had a wonderful Easter and keep strong when times are tough.

A Taste of My Culture

I would like to take your taste buds on a journey with me throughout my blog posts in the future. This journey started between 1845-1917 when British Colonialists visited India and had promised better job opportunities for the Indians. About over 140,000 Indians came to the island of Trinidad bringing a whole new culture. When the Indians arrived in Trinidad they worked in the sugarcane fields as a way to survive. Being that they settled in Trinidad the spices were created differently. The Trinidad curry has more of a Caribbean style. Which consists of other spices that include coriander, turmeric, cumin, and fenugreek. Trinidad curry spice is used in a variety of West Indian dishes like meats, vegetables, and seafood. When using this spice it comes with a bursting of flavors in a unique way. The authentic Indian food has more aromatic spices such as tikka and tandoori masalas. Also, when the spices were substituted from traditional spices gradually the cooking techniques have changed.

For me, I enjoy both West Indian and authentic Indian cuisines. In the future of my blog I will include recipes that I grew up eating. I love both cooking styles and the food is amazingly delicious! Best part about my culture is knowing two cuisines.

Trinidad and India

Strawberry Crepes

Crepes are a very elegant and well-known dessert in France. This treat has a similar appearance to a pancake with a lace exterior. I have made pancakes many times before and there is a difference in the cooking method. Pancakes are made of a thick flour batter. Crepes are prepared in a batter using milk and no water (some crepe recipes use water). You can choose a savory version or sweet they’re great either way. These are wonderful for breakfast or dessert. Also, you can create many ways using different toppings:

  1. Caramel and bananas (known as Banana Fosters)
  2. Eggs and spinach inside with cheese on top
  3. Nutella and strawberries

When I first made these I added vanilla ice cream as the filling inside (when the crepe is cool) and drizzled the homemade strawberry sauce on top. Definitely sprinkled powdered sugar on the crepe as well. With the taste of vanilla ice cream, crepe, strawberry sauce, and sweetness of the powdered sugar it tasted so delicious! Most likely throughout my blog, I will include some more sweet and savory crepe recipes. I do hope you all enjoy this recipe as much as I did.

Ingredients

1 cup pancake mix

1 1/2 cup whole milk

1 egg

1 tsp vanilla

Directions

  1. Use a mixing bowl and add all ingredients together.
  2. Whisk or use a cake mixer and make sure there are NO LUMPS in crepe batter (If there are a few lumps then it’s okay). The texture of the batter should be very thin.
  3. Get a skillet or a medium-size frying pan. Warm stove and use cooking spray to prevent each crepe from sticking.
  4. Heat should be medium-low. Pour batter into the frying pan and move the pan into a circular motion. Allow the batter to have bubbles on top.
  5. Using the spatula loosen the edges of the crepe and flip crepe onto the other side.
  6. Crepes should have a light golden brown color and a lace exterior (Some crepes would have a solid exterior and that’s okay)
  7. When crepes are done allow them to cool and serve with any filling you like.

Here’s What To Do For Strawberry Sauce

  1. Gather ingredients: chopped strawberries, white sugar, and lemon juice. NOTE: I already have 1/4 cup of water in the pot. You have the water in medium-low heat.

2. Add ingredients in the pot.

3. Mix all the ingredients together in high heat for a little bit. Until sugar is dissolved. Then reduce to medium-low heat.

4. Four minutes after mixing, at this point the strawberries start to simmer. Just letting you know being that the strawberries are simmering white foam starts to form and that’s okay.

5. You can give it a stir and the foam will start to dissolve. You’ll see the sauce starting to thicken up. In texture you want chunks of strawberry, but still saucy.

6. Also the color should be bright red and done. After making the sauce move the pot and set aside. Allow the sauce to cool for one hour.

7. When the Strawberry sauce is cooled you can add the sauce on top of crepe.

Serving Size: 6-8 crepes

Makes: 30 minutes or less

Veggie Flatbread Pizza

Pizza, in general, is an American favorite that includes various ingredients and many crusts styles. If you’re a pizza lover then I know you’ll like this pizza. Enjoying a flatbread pizza and watching a movie is my kind of thing especially on a weekend. I have made this flatbread pizza a few times already and decided to share it with you guys. With the use of delicious ingredients including a crispy flatbread crust, pesto sauce, juicy cherry tomatoes, sweet red peppers, spinach leaves, goat cheese, and topped with Mozzarella. All you have to do is layer the ingredients and pop it in the oven. Definitely perfect to serve for dinner parties and also for the entire family to enjoy!

Ingredients

1 pack of Flatbread Crust (14.1 oz) Sometimes there’s two flatbreads in one pack

1 jar of Pesto sauce (6.7 oz)

1 bag of Spinach leaves

1 Red sweet pepper

Goat Cheese log (4 oz)

1 Carton of Cherry Tomatoes

1 block of Mozzarella Cheese ( 8 oz)

Directions

  1. Layout the flatbread on a baking tray.
  2. Spread half jar of pesto onto the flatbread.
  3. Rinse and cut one red sweet pepper in half. Take half of the sweet pepper and cut vertically then layer on flatbread.
  4. Take a few cherry tomatoes (depending on how much you want). Rinse thoroughly and cut in half then spread on flatbread.
  5. Use half a bag of spinach leaves, rinse under running water, pat down dry using a paper towel, and spread spinach leaves all over.
  6. Cut the goat cheese into pieces and layer on flatbread (you could use the entire goat cheese log).
  7. Grate half (or the entire block) of Mozzarella cheese and top the flatbread pizza with it.
  8. Set oven at 350 degrees and then place the flatbread pizza in the middle of the oven. This should take 15-20 minutes to bake.
  9. During this time let all of the ingredients to warm through and allow all cheeses to melt.
  10. After the pizza is done, take out from the oven, and place it on top of the stove or countertop. Allow the flatbread to cool and you may cut into squares before serving.

Serving Size: One flatbread can cut four squares

TIP: Serving size depends on how big or small you cut them

Makes: 15-20 minutes

Valentine’s Day Breakfast/Brunch

This year Valentine’s Day falls on a Friday and everyone is busy with their normal schedule. I think of Valentine’s Day as an extra day to appreciate the love of people around you. If you didn’t have time to plan anything on this special day then no worries at all! There’s still the weekend to do something wonderful for your sweetheart. Luckily, I have the best romantic breakfast/brunch recipe to share with you guys. I have heart shaped pancakes topped with a sweet strawberry sauce and sprinkled with powdered sugar.

If you plan on surprising kids with a Valentine’s Day breakfast you can use this pancake recipe as well. Here are some ideas:

  1. Add colored sprinkles (heart-shaped) in the batter (red, pink, and white)
  2. Add chocolate chips
  3. Add red food coloring aka (Red Velvet Pancakes)

Or you could allow the kids to be creative in the kitchen using their beautiful minds. Have fun with this Valentine’s Day pancake recipe and serve up a nice glass of orange juice. For a brunch style incorporate some fruits like raspberries, blackberries, strawberries, and blueberries etc. However, you choose to create your pancakes is perfectly acceptable.

1 box of Pancake mix

1 carton of strawberries (I used half a box)

1/4 cup sugar

1/4 cup water

1/2 lemon (juiced)

Heart Shaped cookie cutter

Directions

  1. For Strawberry Sauce: Cut up strawberries into small chunks (that way the sauce will cook faster). Combine all ingredients in a small pot, medium heat. 
  2. Bring to a boil, cook over medium low heat for about 20-30 mins. Look for a syrup texture and strawberry chunks are still visible.When sauce is completed move away from heat and allow to cool for 1 hour.
  3. Follow pancake mix instructions (Don’t create a thick batter) My pancake batter was 1 cup that made 8 pancakes. It depends on how much batter you use, that’s how much pancakes you will receive.
  4. When pancakes are done have them cooled on a plate for about 30 mins. 
  5. After cooling the pancakes take the heart-shaped cookie cutter and press down the middle of the pancake. Heart shaped pancakes should be placed back onto a plate.
  6. Then add strawberry sauce on top of the pancake with a finishing touch of powdered sugar. 

Serving Size:8

Makes: 1 hour 30 mins
